Top grade of Japanese Green Tea, it is well known for its soft aroma and sweet, mild taste. The leaves are brought up under reed blinds of straw to shade them from the sun for several weeks during the last stage of cultivation.
Removing direct sunlight reduces leaf photosynthesis, which alters the proportions of substances responsible for tea aroma and taste.
